Does the document viewer stores a copy of the file that is being viewed in the client machine? Or is it being rendered from the server and there is no local copy saved in the client machine?

The Document Viewer doesn't do any downloading to the server itself, it's simply a viewer. It takes in whichever type of data is selected in the form (FileData/Document/FileReference) and displays it. Once the user clicks off the form, the data is disregarded.
