If I delete a process folder, will this action delete all the data, assignments, tasks, flows, etc associated with it?

Deleting a process folder from the User interface will only be a soft delete. The components will only be deleted from the UI not the Database. There still may be reference to the objects in the database tables. To delete these objects from the database we will need to query the tables and delete them individually from the tables they are referenced in.
