There are two possible methods to accomplish this.
You either need to use a either a "Change Value" output mapping, or use the "Mapping Step" to edit these values.
After modifying any of these fields using either of these two methods, you will need to pass the whole object into the respective step (save or update steps) using "Select from Flow" mapping.

[u]Method 1:
[/u]The Change Value output allows to transform an existing fields value. You can do this on a Create Data step (or really any step with outputs related to your data) by selecting the "Output Mapping Editor" on the Create Data step. See the screenshot below for where you can find this.

[u]Method 2:[/u]
Another way to achieve this is by using the mapping step. This step is actually self-aware of the data you are passing into it, and will have no outputs. When you add this step to a flow, it will automatically add relevant inputs to itself based on your flow. Please click “Build Data” on your data-structure and map whatever you’d like into those fields. Any fields left to ignore will simply carry over their old values, and the ones you have mapped will replace the older ones.

After using either of these methods, you will need to then pass the whole object to your Save or Update step, (in the screenshot below, the Execution Extension is just named "test") so that the Save/Update step will use this modified object to save using your updated property or properties.
