SMTP Configuration

We working on updating our SMTP configurations after our initial install. What is the recommended method for doing this?
We attempted to run the Edit settings in the installer and appeared to save ok in the GUI but, if you go back and check the settings they didn’t take. If we look at the config.xml the changes are there. -
