I was wondering if there was a way to create a report column that displays the number of days between the current date and a date specified in my data structure.

You need to use the Flow inline field property and define a flow that calculates the difference in days using the Get difference in Days flow component. Map the newer date input to the current date and older date input to the date from the Data Structure field.
