Is there a setting available to change the default sorting of converter flows shown when using the Converter input selection of the flow designer?

Is the section shown in the attached image what you meant by sorting converter flows? There are no options in the product currently to be able to sort these items. Did you just want to be able to have the items displayed in alphabetical order or some specific order that you dictate?

Yes, that is the menu! If the type is string, we have about 50 flows pop up. Alphabetical would be ideal because we use a prefix for our projects which would allow them to be grouped within this window.

Ive submitted a feature request for this: [b][DT-031908] Sort Converter Flows List in Alphabetical Order for Easier Navigation[/b].

In the mean time, you can use [b]Ctrl+F[/b] to [b]find the flow[/b] you need [b]by its name[/b]. Since Decisions is within a browser window, browser level find options work here. It will highlight the associated name which should make it easier to locate the flow by your project prefixes.
