I am looking to create a Dashboard that displays the users assignments to them. What Data Source should I use to fetch the assignments?

You can use the Assignment Data Source or Assignment Data Source with Email available through Common to fetch data regarding assignments.

You can then add various filters to the Report to control what assignments are shown to the users.
